Experience making your own vegan temari sushi (ball-shaped sushi) with fresh seasonal vegetables and edible flowers! Start with a tour to learn about Kyoto’s seasonal vegetable production and shop for ingredients.
First, visit a refined, new concept supermarket run by a wholesaler greengrocer. Explore the rooftop vegetable farm where you can learn more about the flow of the Japanese seasons, the role of vegetables, and the connection to seasonal food.
Next, stop by a vegetable restaurant that focuses on locally grown and locally consumed, SDG-friendly (Sustainable Development Goals) produce. Pick up some fresh produce for the sushi making class.
Continue to Nishiki Market, a local market with over 400 years of history and the heart of Kyoto’s kitchen. Learn about the history, varieties and importance of local vegetable cultivation methods. You will shop for ingredients such as edible flowers, pickles and Konbu and then head to your sushi-making class.
In the class, learn how to prepare sushi rice and shape your temari sushi using the fresh ingredients you bought during the tour. Create beautiful, Instagram-worthy sushi and enjoy it for an early dinner.
Finally, you will receive a recipe so you can use the same techniques to recreate your temari sushi at home with locally sourced ingredients!
